The color is pale yellow gold and bright with deep straw yellow reflections in the glass. The champagne is animated by fine and lively bubbles which feed a delicate collar. The visual sensation announces a rich and nuanced wine.
Aromas of hot apple, roasted mango, vanilla cream, roasted pineapple, candied lemon, apricot, passion fruit, with smoky and humus accents. Aeration of the Champagne reveals notes of butter, quince compote, mirabelle plum, grilled almond, acacia honey, roasting, vine peach, candied pear, mimosa, with accents honey and cumin.
The mouth, the contact in the palate is supple and fresh with a creamy and melted effervescence. The Champagne develops a pulpy and coated fruity substance, supported by a lemony acidity and yellow fruits. The mid-palate is orchestrated by a clay-limestone minerality which gives fruity volume, frankness, iodized salinity and length on the palate with fruity resonance. The work carried out partly in the woods is finely sewn to the wine, allowing it to breathe with all its fruit while preserving its freshness and its remarkable luscious sensation. The careful dosage represents the last element of this alchemy which is intended to be balanced, tasty and gourmet at the same time.
