Winemaking
Gilbert & Gaillard have selected and assembled the best Vermentinos from Languedoc to offer you this 2020 vintage. The grapes are harvested, destemmed and pressed overnight, the fermentation is carried out at low temperature after a cold pre-maceration, the wines are aged on lees for a week, the vats do not undergo malolactic fermentation, everything is done to preserve the freshness and aromatic expression of the wine.
