Winemaking
The grapes are de-stemmed and sorted manually on conveyor belts then placed in vats. The vatting lasts about 8 to 10 days, characterized by a gentle extraction carried out using delestage at the start of fermentation. The post-fermentation maceration work is carried out according to daily juice tastings. The wine is not intoned in order to preserve the expression of the fruit and a remarkable minerality.
